Vegan Chipotle Meal w/ a Cheesy Plant Based Queso!

Mexican inspired meals are great for beginner plant based eaters! They are super easy to make and customizable for everyone!

Ingredients:

  • fresh chopped romaine

  • sautéed black beans with cumin, smoked paprika, Braggs liquid aminos (you can find this at Whole Foods & health food stores) & lots of sea salt & pepper

  • corn w/ cilantro, salt & pepper

  • salsa

  • other great add on's are roasted peppers & guacamole!

Plant Based Queso Recipe:

I definitely recommend using a proper high speed blender for this!

  • 1 cup raw cashews

  • 1/4 cup red baby tomatoes

  • 1/4 cup nutritional yeast

  • lots of salt & pepper

  • squeeze of lemon

  • water to blend smooth
