The Perfect Summer Salad!

Salad bowls are a great summer meal to pack in those colorful raw veggies, proteins and grains!

My favorite salads have a base of greens- some suggestions would be fresh romaine, organic spring mix, and curly kale. Greens are essential for your all around health and will make your skin glow:)

I try to add at least 3 other colorful chopped veggies into a salad. Some great ones are corn, cucumber, chopped carrots, tomatoes, red onion, & roasted sweet potatoes.

Mix with cooked brown rice & white beans for a perfect source of plant based protein & substance!

I suggest making your own dressing, instead of a store bought one which usually full of added sugars, preservatives, dairy, and hydrogenated oils! If you are going to buy dressings, I suggest finding some at a health food store & looking at the ingredients.

Dressing Ideas: (blend all with a dash of warm water)

  • tahini, maple syrup & lemon

  • cashews, dill, lemon, salt & pepper blended on high

  • balsamic, coconut aminos & a couple spoonfuls of hummus

  • cashews, lots of basil, nutritional yeast, salt & pepper
