Homemade Vegan Protein Bars

You will need:
- oats
- vegan vanilla protein powder
- dark chocolate
- coconut
- sea salt
- peanut butter
- maple syrup
- pumpkin seeds for garnish
Recipe:
- for the base, add 2 cups of oats in a high speed blender and blend until a smooth flour forms.
- in a bowl, add the oat flour, 1/2 shredded coconut, 4 tablespoons of vegan vanilla protein powder, 1/4-1/2 cup of peanut butter, 1/2 cup of maple syrup & a pinch of sea salt. Mix well and place in a pan to sit in the freezer while you make the topping.
- for the topping, melt a bar of vegan dark chocolate with 1 tablespoon of coconut oil. Place over the base layer and top with shredded coconut, sea salt, and pumpkin seeds before placing in the freezer for 1-4 hours.
- once the chocolate is solidified, take the bars out of the pan and cut into desired squares. Store in a container and keep them in the freezer or fridge for up to 10 days.
